The summer trifecta – Memorial Day, Fourth of July, and Labor Day – is basically just one long excuse to eat outside and pretend that red, white, and blue food counts as festive, not weird. And listen, I’m all for a big sheet cake moment, but sometimes it’s nice to give everyone their own little treat (especially when you’re trying to avoid that one guest who insists on cutting “just a sliver” and ends up sawing through half the cake). These personal-sized patriotic dessert cakes are cute, colorful, and just the right amount of extra with no slicing, no sharing, and no judgment if you eat two.

First things first – go ahead and get all your ingredients ready. It just makes everything smoother and saves you from realizing halfway through that you’re out of sugar (not that that’s ever happened to me… more than once). Start by whipping up the heavy cream until you get those nice stiff peaks. Think cloud-like, not runny.

Once your cream is holding its shape, mix it together with the cream cheese, sugar, and vanilla. You’ll end up with a smooth, slightly sweet base that’s basically the edible version of a hug.
Now, divide that mixture into three bowls. Leave one plain (that’s your white layer), and color the other two with the red and blue food coloring. A little goes a long way, so start slow and stir until the colors are nice and bold.

Grab some small jars or cups and start layering: white, blue, white again, red, then one last layer of white on top. It’s kind of like a festive dessert flag situation. Pop them in the fridge to chill until you’re ready to serve.

And the final touch? A sprinkle of star-shaped sprinkles (or whatever sparkly topping you’ve got) right before serving. Because if you’re going to make a personal-sized patriotic cheesecake, you might as well go all in.
