Roasted Red Pepper Hummus (with a Hint of Garlic)

I discovered hummus a number of years ago but for some reason stuck with the unflavored version. I guess I liked it so much, I figured why mess with what was already good, right? I was at a party last year when I tried a sun-dried tomato version and really like it. Once I realized how much I liked flavored hummus, I couldn’t help but experiment and try making all kinds of different flavors myself. Some really did not come out very well at all, but I did discover a few gems and I’m happy to share this one with you – Roasted Red Pepper Hummus (with a hint of garlic).

I’m going to be upfront here and tell you that what makes all the difference in this recipe is roasting your own peppers. If you’re going to use jarred roasted peppers, you might as well go buy the red pepper hummus they sell prepackaged in the store. Guys, you know me – I’m all about shortcuts and making things easier when it doesn’t impact the quality of the recipe. But here? It impacts the quality of the recipe!

How to Roast Red Peppers at Home

Cover a baking pan with foil and slice some red peppers into halves. After you have washed and seeded them, place the red peppers skin side up on the pan. Take a few cloves of garlic and brush them with olive oil and place them next to the peppers. Place the pan under the broiler until the skin of the peppers is charred and black. The cloves of garlic should be a golden tan color and mushy. Voila – you have now roasted red peppers!! Place the charred peppers in a brown paper bag and roll the top so that it is sealed closed. After about 10-15 minutes, the peppers should have cooled enough to handle them. I like to run them under cool water while I remove the skin. It should peel off fairly easily if they are truly done cooking.

Now to make the hummus!

Roasted Red Pepper Hummus (with a Hint of Garlic)

Ingredients

  • 1 15 oz. can garbanzo beans rinsed and drained
  • 2 cloves roasted garlic
  • 1/3 cup tahini
  • 1/3 cup lemon juice
  • 2 roasted red peppers without the skins
  • 1/8 teaspoon fresh basil
  • Salt and pepper to taste

Instructions

  • Add all ingredients to a food processor.
  • Pulse several times to begin mixing the ingredients.
  • Puree until smooth and no lumps are visible.

You can certainly serve your hummus with pita bread, as is traditional. I prefer to have something with more of a crunch! I love Saffron Road snacks with my hummus. They offer a great selection of snacks made from beans, lentils, and chickpeas!

    Roasted red pepper hummus is the best. I usually buy it from the grocery store, but making it sounds pretty easy.
