There is a reason that the iconic Mother’s Day image is that of mom getting breakfast in bed. Every other morning, mom is up early, making breakfast for everyone else, sometimes before she has even had her first coffee. So it makes a lot of sense that mom should have Mother’s Day off from making breakfast, right?
But that’s not to say she should be subjected to cold, soggy cereal on her special day. Mom deserves a hot, hearty and yummy breakfast on Mother’s Day! I’m thrilled to be partnering with Johnsonville to share a quick and easy Mother’s Day breakfast that will make mom happy on her special day (and beyond – I’ll explain that part at the end of the post).

Now, if your kids are anything like my kiddo, they are fascinated by mini foods. Josh is not a hamburger fan, but loves sliders! With this in mind, I set out to make breakfast sandwiches – just a little smaller. So more like breakfast sliders! These are so easy to make that the kiddos can whip them up themselves (with a little help from dad around the oven if they are on the younger side).
I started off my making the biscuits. I found several brands that now offer “mini” buttermilk style biscuits in those tubes that pop. They are easy, yummy and the perfect size for sliders!

Next, I mixed some eggs together and poured them into regular sized muffin tins, filling only about 1/4 of each cup. I baked them at 350 until they were cooked all the way through. (If they puff up a bit, they will go down as they cool.)

Next I heated up my fully cooked Johnsonville sausage patties in the microwave which took just seconds.

I built my sliders and topped with a small slice of cheese – perfection!

Wondering about that whole “they keep giving” thing? Here’s the best part! Dad or the kids can double or triple the recipe and freeze the extras for a quick and easy breakfast in the future. Just make sure they are fully cooled, wrap tightly in plastic wrap and pop in the freezer. When you are ready to give mom another morning off, unwrap and microwave until hot (usually about 45 seconds but microwaves can vary).
