Quick and Easy Breakfast Sandwiches

Every year the same thing happens – I start the school year with the best of intentions to make our mornings organized, easy, and including a hearty morning breakfast. The first few days, I get up early and make pancakes or hot cereal and by the end of the first week, we are grabbing something as we run out the door. This quick and easy breakfast sandwich has been my saving grace and allows us to have a hearty breakfast even on the mornings we are in a rush. I’m thrilled to be partnering with our generous sponsor, Johnsonville, to bring you these quick and easy breakfast sandwiches!

There are several things I love about breakfast sandwiches. They are portable, they are yummy, and they are easily customizable for everyone in the family. I love adding onions, mushrooms, spinach, and breakfast meats to mine. The guys like the breakfast meats but would prefer to skip the vegetables. No worries – I can make a batch of all different variations in one sitting and it’s quick and easy.

Step 1: Gather all the ingredients you will be using. What you include will vary depending on your own tastes. You can use English muffins, croissants, or biscuits as your “bread”. You can add anything you want to your egg patties – veggies, meats like sausage and bacon, even canned treats like artichoke hearts or olives. Really, the only required ingredient is eggs.

Step 2: Prepare whatever you will be adding to your egg patties. I chose to add Johnsonville breakfast sausages, a gourmet mushroom mix, bacon, and onions. I fried each up individually and set them aside.

Step 3: Grease an extra large muffin pan. I use a pan designed to make jumbo muffins as it makes patties that are wide enough to fill a muffin or biscuit. Ramekins are also an option.

Step 4: Crack as many eggs as you are making sandwiches into a bowl and lightly scramble them.

Step 5: Pour egg mixture into each muffin cup and add the desired ingredients.

Step 6: Bake at 350 for 25 minutes and test for doneness. Allow to cool completely if freezing.

Step 7: Place each egg patty on an English muffin, croissant, or biscuit and top with cheese if desired.

These are super yummy fresh out of the oven, but they also freeze well and heat up easily for a quick and customized morning breakfast. Simply take out of the freezer and remove any plastic wrap or bag they were stored in. Wrap in a paper towel and place in the microwave. Heat for 130 seconds at 30% power then 60 seconds at 100% power. It may be hot, so check before consuming!

    I love the commercial for that product where the parents tell the grown son that the factory burnt down. That cracks me up. I have heard good things about this too.
