Chocolate Zucchini Cake Recipe (with all that extra zucchini!)

I was conversing with my cousin, Jean aka Purple Haze Mama last night on Twitter (what? isn’t that how all families keep in touch these days?) when she mentioned that she had made a delicious chocolate zucchini cake. Since we have zucchini magically appearing on our plants daily, I asked her for the recipe.

Well, we gave it a try and it is indeed delicious! If you too have zucchini coming out of your ears, you might enjoy this as well!

Chocolate Zucchini Cake
1/2 C butter
1/2 applesauce
1 tsp vanilla extract
2 1/2 C all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1 3/4 white sugar
2 eggs
1/2 C sour milk (you can use regular milk with a tsp of lemon juice instead)
1/4 C unsweetented cocoa powder
1 C semisweet chocolate chips
2 C zucchini, finely diced (I shreaded mine in the processor)
Directions
* Preheat over to 350 degrees and grease and flour a 9×13 pan
* Cream butter, applesauce, and sugar together until light and fluffy.
* Add eggs, vanilla, and sour milk. Beat until smooth.
*Mix flour, cocoa, baking soda, and cinnamon and add to creamed mixture. Beat well.
* Add zucchini and stir well.
*Pour into 9×13 pan and sprinkle the top with chocolate chips.
* Bake at 350 for about 40 t0 45 minutes or until done.

    Chocolate and zucchini sure seems like a unique flavor combo but I would love to give it a try one day.

    I was first introduced to chocolate zucchini cake by Aunt Kathy many years ago (am I old enough to say that???). But when I couldn’t find that recipe, I found this one and am pretty sure it’s the same or at least darn close. Glad you liked it!
