We all know that oatmeal is a healthy breakfast, right? But if you’re anything like me, you find plain oatmeal just a little boring. While it’s tempting to add in all kinds of goodies (can we say chocolate chips??) to make oatmeal tastier, the items we add in should also add to the nutritional benefits, not negate them. I’m thrilled to share with you a yummy recipe that does just that.
Triple Punch Oatmeal
Ingredients
1 Cup oats
1 Cup coconut milk
2 Tbsp chia seeds
2 Tsp vanilla
1 Ripe banana, sliced
½ Cup coconut flakes
Directions
Bring milk in a saucepan add oats, milk and 1 tbsp chia seeds, boil over medium low heat.
Stir until the oats have thickened and look creamy (about 10 – 15 min).
If needed add more coconut milk.
Turn heat off, add the vanilla and stir well until it’s evenly distributed.
Serve the oatmeal in bowls and top with sliced banana, coconut flakes, chia seeds, and enjoy.
Tips
For a different taste, drizzle a bit of maple syrup on top.
