Slow Cooker Brown Sugar Carrots Recipe

Nothing compliments a holiday meal as well as a perfect side dish of sweet carrots. Slow cooker carrots are not only easy to make, the whole family loves them – even your picky eaters.

Crockpot carrots are a delicious side dish for holiday dinners but also create a perfect vegetable side dish for busy weeknight dinners. This recipe uses some basic, simple ingredients and also frees up oven space by utilizing your crock pot. When planning your Thanksgiving Dinner or other holiday meal, be sure to allot for the extended cooking time that slow cooking takes. You will need to plan ahead at least 3-4 hours as you can’t throw them in at the last minute like you can with regular carrots. Don’t forget to grab my Thanksgiving Dinner Planner! (It’s free.)

First, gather your ingredients. You will want 2 pounds of baby carrots, 1/2 teaspoon of salt, 1/2 cup of brown sugar, 2 tablespoons of butter, cubed and fresh parsley chopped to garnish.

Next, you should prepare the slow cooker. Whether you use a slow cooker liner or not, you will want to spray the inside with non-stick spray or olive oil. Mix the brown sugar and salt together. Add the carrots to the slow cooker and top with the brown sugar mixture. Dot the cubes of butter over the carrots and brown sugar and cook on high for about 4 – 5 hours or until the fresh carrots have reached tender perfection! I like to garnish with chopped parsley and some fresh black pepper when plating.

If you have leftovers (and don’t be surprised if you don’t!) these tender carrots will keep in an airtight container in the refrigerator for up to 3 days. This carrots recipe has become a dinner-time favorite and goes well with so many main dishes like beef, pork chops and chicken. The best part is that these carrots take so little effort to make, you can spend your time on the rest of the meal! If you are craving these but don’t have brown sugar, you can substitute maple sugar or even orange juice in a pinch.

Slow Cooker Brown Sugar Carrots

Sweet and tender carrots that are a breeze to make.

Equipment

  • 1 slow cooker

Ingredients

  • 2 pounds baby carrots
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 2 tbsp butter, cubed
  • fres parsley

Instructions

  • Prepare the slow cooker with non-stick spray or olive oil
  • Place carrots in clow cooker
  • Spread brown sugar and salt over carrots
  • Dot cubes of butter evenly over carrots
  • Cook on high for 4 to 5 hours
  • Garnish with fresh parsley
