While my immediate family does not eat gluten-free, we have LOTS of friends and extended family who do. When Josh was a toddler, one of his best friends was gluten-free and I had the hardest time finding treats that his friend could eat and that Josh did not mind eating. They are the perfect treat on a hot summer day and we had fun pairing them with a fruit sorbet to make a tasty ice cream sandwich. (The “Oh Sugar” cookies also pair well with fruity flavors.)
