It seems that Fall has finally landed in Wisconsin. Now that the weather is a bit cooler, we love eating meals that are a bit heartier than the typical summer salads we had been enjoying. But we don’t necessarily want heartier meals to mean heavier. We do try and keep meals as low fat, low sodium and low cholesterol as possible. BUT we do not want low taste!
Some great ways to lighten up your favorite dishes is to make substitutions to some of the ingredients. Dairy ingredients are a great place to swap out for a lighter version. You can add lower fat or no fat options that will still create the creamy texture and flavor of the dairy products but without all the fat. You can also substitute lighter versions of items that might have more fat, like meats or egg noodles. If you typically use ground beef in a recipe, check and see if you can find a lower fat version (like ground sirloin) and substitute that.
Since cool weather seems to bring out the noodle dishes at our house, we are thrilled to have a great selection of No Yolks Noodles available to us at most of our local grocery stores. No Yolks offers noodles that are a lighter version of the egg noodles you’ve been used to using. They are made with egg whites (hence the name – No Yolks) so they are cholesterol free and lower in sodium and fat than your traditional noodles. That means you can make all of your favorite noodle dishes without breaking any of your lighter eating resolutions. (And be sure to stop back and check out my lightened up version of my favorite crock pot beef stroganoff which I will be sharing in an upcoming post!)
But the great news is that No Yolks comes in a bunch of different types of noodles. You can go way beyond just making tuna casserole or stroganoff and grab noodles for Stir Fry, Broad, Extra Broad, Fine, Kluski, and even Dumplings. Imagine how many dishes you can make with all of those choices!!
