This Easter, we decided to vary slightly from the traditional ham dinner. We had ham at Christmas and New Years and wound up with enough frozen leftovers that we have been having ham pretty regularly since then. With Easter being so early this year, I decided I wanted something different for Easter dinner this year. I set off to my local Pick ‘n Save to grab some ingredients.
I generally try to do my shopping on Wednesdays or Saturdays as those are Pick ‘n Save’s double coupons days. This Saturday was a “Double Double” day which meant you could double the number of coupons you could double. (Wow, that was a mouthful!) They also have this great program called “Hamperks”. In the weeks leading up to Easter, you can earn a discount on your ham by earning points on your rewards card with your purchases. They have a similar program before Thanksgiving as well.
I headed to the produce department to grab some potatoes and scallions for my twice-baked potatoes.
I couldn’t resist getting some fresh brussel sprouts. If you had told me when I was a kid that I would love these as an adult, I would have thought you were nuts!! I roast them with olive oil and garlic until they are a bit blackened on the outside – yum!
Next I grabbed some nitrate-free bacon (also for the potatoes).
I decided we would have beef as our main meat. There are so many beautiful cuts at the meat counter! (I decided on a beef tenderloin.)
I figured I’d make it easy on myself and grab a cheesecake for dessert.
So, our menu would up being:
herb crusted beef-tenderloin, garlic roasted brussel sprouts, and twice baked potatoes – doesn’t it look good?? (It was!!)
Oh, and don’t forget dessert! The Tiramisu cheesecake was delicious!
