McCain Potatoes Make Dinner Fast and Easy! #giveaway

I’d like to say that I enjoy cooking dinner. I’d like to say it, but it wouldn’t be true. I enjoying cooking when I don’t have anything else that needs to be done AND I have all the time in the world to get the meal ready. Which is pretty much never.  Add in the fact that I just started a new job – one that has had me commuting over an hour each way several times a week, and I’ll bet you can guess my thoughts on cooking dinner lately!

To say I’ve been all about quick, easy, and yummy lately would be an understatement!  I’ve been concentrating on making meals that all of us like, that are easy to make, and don’t have a laundry list of chemicals in them.

McCain potatoes definitely came to the rescue this week!  I got caught in traffic one night and flew in the door just before LJ got dropped off from school. By the time we finished homework, it was dinner time already.  I pulled out LJ’s new favorite meal – frozen shrimp.  McCain All Natural  Potatoes made a quick and easy side dish.  



We picked the sweet potato Cross Trax as sweet potatoes are a family favorite!

We did run into the challenge we seem to face every time we make sweet potato products at home – they were a bit mushy. I’ve been told that if you fry them, they come out as crisp as any restaurant treat, but we tend to try and stick to baking fries and other potato products for health reasons.  This is probably part of the reason why we typically don’t serve fries as a side dish at home and save them for a special treat when we are out.
