This week, I was issued the challenge to make a meal out of only items I could purchase at a gas station convenience store. While this might seem like a daunting task in and of itself, the person issuing the challenge did not know that my house harbors the pickiest eater – ever.

I headed out to my local gas station and did something I rarely do. I went inside. (See, I’m usually a pay-at-the-pump kinda girl.) As I wandered around looking for inspiration, it hit me that the chip aisle was pretty much half of the store and it might be a good idea to use a recipe or dish that centered around some sort of snack chip.
Then I remembered reading something on a friend’s blog about walking tacos. Now, Jodi’s tacos had a few things in them that I could not find at my convenience store, like ground beef and lettuce, but I was not going to let that stop me. So I set out to make my own creation: Convenience Store Walking Tacos!!
I grabbed the essentials – Fritos, nacho cheese, salsa, sour cream, and even found some beans for protein. I grabbed a gallon of milk to wash it all down with and was done. I headed home wondering if they would pass the LJ taste test.

I assembled the Convenience Store Walking Tacos by breaking up the Fritos and pouring them into the bottom of a plastic cup. I put the beans (well drained!), salsa, and nacho cheese on top and stirred them up a bit. I finished off with a dollop of sour cream on top and handed them to my very skeptical son.
And the verdict is……. |
He LOVED them. He even asked for seconds once he finished the first cup!
Now, if your convenience store has a little more to choose from, you might be able to add some things like guacamole, lettuce, tomatoes, or even some beef. Play around and see what you like! What other things might you add to your Convenience Store Walking Tacos?

Now that is truly creative. I would have a hard time creating a meal with convenience store items because ummmm I’m with you. I never go inside the store! But hey – they do at least have milk, so I’m sure I could do something!

This is awesome – I heard of Walking Tacos last year when a friend of mine was doing a vendor event in PA – I had NEVER heard of anything even LIKE them. So funny! And good to know the next time I am driving cross country and can only find a convenience store! (which happened a LOT between Florida and Texas!!)
