Well, we gave it a try and it is indeed delicious! If you too have zucchini coming out of your ears, you might enjoy this as well!
Chocolate Zucchini Cake
1/2 C butter
1/2 applesauce
1 tsp vanilla extract
2 1/2 C all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1 3/4 white sugar
2 eggs
1/2 C sour milk (you can use regular milk with a tsp of lemon juice instead)
1/4 C unsweetented cocoa powder
1 C semisweet chocolate chips
2 C zucchini, finely diced (I shreaded mine in the processor)
Directions
* Preheat over to 350 degrees and grease and flour a 9x13 pan
* Cream butter, applesauce, and sugar together until light and fluffy.
* Add eggs, vanilla, and sour milk. Beat until smooth.
*Mix flour, cocoa, baking soda, and cinnamon and add to creamed mixture. Beat well.
* Add zucchini and stir well.
*Pour into 9x13 pan and sprinkle the top with chocolate chips.
* Bake at 350 for about 40 t0 45 minutes or until done.

ReplyDeleteChocolate and zucchini sure seems like a unique flavor combo but I would love to give it a try one day.
ReplyDeleteI was first introduced to chocolate zucchini cake by Aunt Kathy many years ago (am I old enough to say that???). But when I couldn't find that recipe, I found this one and am pretty sure it's the same or at least darn close. Glad you liked it!
